executable files have headers, so the important stuff is at the start of the file. zip archives have footers, meaning the important stuff is at the very end of the file. And LuaJIT also adds in a few 5.2 and 5.3 features... and löve itself also adds in even more functions that can be found in newer lua versions too.

I faintly remember someone saying that you can still detect joystick/gamepad stuff even when unfocused though, if not keyboard/mouse.

No, it's not possible through regular means.
(Edit: It's not completely impossible, but achieving it requires os-specific lower level workarounds)

Or they can just use array images that don't suffer from bleeding artifacts, as was stated above, with the only downside of all tiles needing to be the same size. :v
