Can't Replace OSX Icon on Love 11.0

While distributing my game, I'm unable to replace the .app icon in the OS X version using the method that worked for 0.10.2 - it still shows the default Love icon. I have a sneaking suspicion that the icon is being pulled from the new 'assets.car' file that has appeared in the resources directory from 0.10.2 to 11.0. Has anybody else gotten this to work?
